February carries a subtle shift in energy.
We’re at Imbolc now, the midpoint between the winter solstice and the spring equinox. Traditionally, this marks the first stirring of light returning as a quiet knowing that something is beginning to move again.
The land hasn’t changed much yet. The days are still cold, but beneath the surface, life is preparing. And this month invites a similar energy from us. Not forcing growth nor demanding clarity. Just noticing what feels a little more possible than it did before.
How we start our morning feeds our day, so this month, I’m sharing a simple winter recipe: warming apple and cinnamon porridge. It’s the kind of food February appreciates. Soft, warming, uncomplicated and something you can make without thinking too much. It carries the Imbolc energy quietly, nourishment returning, warmth held, no rush towards spring.
Apple and Cinnamon porridge
You will need: (serves 1–2)
- 1 apple, peeled or unpeeled, diced
- ½ cup oats
- 1–1½ cups milk or plant milk (or water)
- ½ tsp cinnamon
- A pinch of salt
- Optional: honey or maple syrup, a knob of butter, a few raisins or chopped nuts
To make it:
- Put the apple, oats, liquid, cinnamon and salt into a small pan.
- Bring gently to a simmer, then cook slowly for 5–10 minutes, stirring now and then, until soft and creamy.
- Finish with honey or maple syrup if needed, and a little butter if that feels right.
- Eat it warm. No garnish required.
A good February breakfast, or a simple supper when the day has been a bit much.
